Blueberry Honey Peanut Butter Cups

Creamy and sweet peanut butter cups made great by blueberry honey’s Toby the Geek!

Preparation time: 40 minutes
Total preparation time: 80 minutes

Ingredients for 10 servings:

  • Peanut butter: 1 cup

  • Dark chocolate chips: 1 and 3/4 cups or 300 grams

  • Powdered sugar: 1/2 cup

  • Blueberry flavored honey: 4 tbsp 

Instructions:

Start by melting 2/3 of the dark chocolate in a microwave or using a double boiler. Once melted, pour the chocolate into silicone molds that are about 1.5 inches in diameter, and about 1 inch high. Working quickly, rotate the melted chocolate around to mold so that all sides of the mold are coated. 

Set the remaining chocolate aside. Place the molds in the refrigerator until the chocolate solidifies.

In a mixing bowl, combine the peanut butter with the powdered sugar and blueberry honey. Mix until smooth.

Take your chocolate covered mold out of the fridge then fill with the peanut butter mixture. 

Finally, melt the remaining chocolate and pour it over the top of the mold to completely cover it. Place in the refrigerator for 2-3 hours, or at least until they can be easily removed from the silicone molds.

Chef's tip:

Place your silicone molds in the freezer for 30 minutes prior to pouring in your melted chocolate to achieve a thicker initial coating. Also heat up the peanut butter before making the filling so that all the ingredients can be more easily mixed.
