Strawberry Honey Infused Angel Cake
A delicate strawberry angel cake glazed with our delicious strawberry honey.

Ingredients for 10 servings:
Eggs: 8
Cake flour: 1 and ¼ cups
Baking powder: 2 Teaspoons
Granulated sugar: ¾ cup
Vanilla sugar: ¼ cup
Strawberry flavored honey: 3 tbsp
Instructions:
Start by cracking and separating the yolk and whites for all your eggs.
Place the egg whites into a large mixing bowl and use a stand mixer to whip the whites until white stiff peaks form.
To the yolks, add the granulated sugar, vanilla sugar, baking powder, cake flour, and half of the strawberry honey. Mix all the ingredients until smooth and free of lumps.
Into your yolk mixture, add your whipped egg whites in slow increments. Gently fold the whipped egg whites into the yolk mixture until everything has been fully incorporated. Be careful not to overmix the egg whites.
Pour the batter into a lightly greased cake pan and bake in a preheated oven at 320 °F for 20-25 minutes until golden brown.
While still hot, spread the remaining honey evenly over the top. Let it cool completely, then slice and serve as desired.
Chef's tip:
Fold the batter, do not stir or whisk. Using a spatula, pass through the middle of the mixture, across the side, and fold over the top.
